Phyllis's Guacamole Recipe Plus Avocado toast

Guacamole Recipe


3 ripe avocados
1/2 red onion, finely diced
2 Roma tomatoes, diced
2-3 tablespoons finely chopped fresh cilantro
1 jalapeño pepper, seeds removed and finely diced (omit if you don't like it too spicy, or add a little cayenne pepper)
2-3 garlic cloves, minced
1 fresh lime, juiced
1 teaspoon salt


Step 1: Slice the avocados in half, remove the pit, and scoop into a medium sized bowl.

Step 2: Mash the avocado with a pastry cutter to your desired consistency.

Step 3: Add the remaining ingredients and stir together. Adjust to your taste. It's always a good idea to add less ingredient initially, taste, then add more until it's right for you. Removing the seeds from the jalapeño reduces the spiciness.

Step 4: Serve with your favorite Latin dishes or tortilla chips.


Bacon Avocado Toast

Ingredients for 2-3 slices:

1 avocado

salt and black pepper to taste

garlic powder to taste, or 1 clove garlic, finely diced

1 teaspoon extra-virgin olive oil

2-3 slices bread, toasted

2 slices bacon


Step 1: Prepare crispy bacon your favorite way (we like to bake ours)

Step 2: Slice the avocados in half, remove the pit, and scoop into a small bowl.

Step 3: Add the salt, pepper, oil, and garlic to the avocado and mash together with a pastry cutter. 

Step 4: Spread the mashed avocado mixture onto toasted bread. Top with strips of bacon.
